VICO ETNA ROSSO DOC Prephylloxera

VICO is born from a careful and rigorous selection of Nerello Mascalese (90%) and Nerello Cappuccio (10%), sourced from a parcel of pre-phylloxera vineyard located in Contrada Santo Spirito. The grapes are hand-selected directly during the harvest in the second half of October. This reserve is an elegant limited edition, characterized by extraordinary depth and complexity. The intense nose blends primary notes of red currant and pomegranate with tertiary aromas of underbrush, tobacco, cocoa, and leather. The tannins are enveloping yet fine and elegant. Structured, layered, and with a long, persistent finish.

Vinification:

Gentle destemming and pressing of the grapes; transferred by gravity into truncated-cone steel vats, where fermentation takes place over 20 days at controlled temperatures (26°–30°C). Daily punch-downs ensure proper extraction of aromas and color from the skins.

Aging:

After malolactic fermentation, the wine is aged in 700-liter French oak tonneaux for at least 14 months, followed by at least 1 month in steel tanks and about 20 months in bottle.
