ETNA BIANCO DOC

Our Etna Bianco DOC is a careful selection of historic native white grape varieties: Carricante (90%) and Catarratto, Grecanico, Inzolia, and Minnella (10%), sourced from the vineyards in the Piano dei Daini district. This wine is extraordinarily vertical and fresh, pleasantly persistent, with a perfect balance between acidity and minerality. The bush-trained vines grow at altitudes between 600 and 700 meters above sea level. The first plantings date back to 1870.

Vinification:

The must flows quickly into the press, separating from the skins at 0 bar and from the coarse lees by cold static decantation. Fermentation takes place at a controlled temperature between 13–15°C for at least 10 days.

Aging:

In stainless steel tanks for at least 4 months, with fine lees kept in suspension. The wine rests in bottle for a minimum of 2 months.
